Sorbitan Ester Ethoxylates, also known as Polysorbates, are non-ionic surfactants that are widely used in various applications within the biochemistry, food production, and cosmetics industries. They are particularly valued for their emulsifying properties, which allow them to stabilize mixtures of oil and water. Polysorbates are mixtures of partial esters of fatty acids with sorbitol and its anhydrides, ethoxylated with approximately 20 mol of ethylene oxide (EO) added for each mole of sorbitol and sorbitol anhydrides. These substances are prone to degradation, which can lead to the formation of several by-products. Despite their complex nature, polysorbates are commonly used in formulations due to their stabilizing properties, which help prevent aggregation, denaturation, and surface adsorption of proteins and monoclonal antibodies in solution.
